Description

THE CUT

The sirloin tip roast comes from the front end of the rear leg of the animal. It’s a lean but well-marbled roast cut that is a great alternative for someone seeking a roast that is leaner than a chuck roast.

PREPARATION

Thoroughly salt and season your roast from 40 to 120 minutes prior to cooking and let sit at room temperature. Pre-heat your oven to 350 degrees and prepare a super hot cooking surface, such as a cast iron skillet, when ready. Heat oil on the cooking surface and sear roast for a minute or two (depending on surface heat level) on all sides. When all sides of the roast are seared very brown, add a few tablespoons of butter and turn the roast in the browned butter for a few seconds to coat all sides. Transfer the roast to an oven-roasting dish and place in the oven for about 10 minutes per pound until the internal temperature of the roast has reached 130 degrees (medium-rare). The actual minutes per pound will vary somewhat based on roast thickness, so be sure to check the leg temperature early to avoid overcooking. When the desired temperature has been reached, pull the roast from the oven and let sit for 20 minutes before slicing across the grain. Use the drippings from your roast to make a gravy with butter and cornstarch and enjoy with your favorite side dishes.

Orders must be placed at least 24 hours prior to pick-up time. If your order is placed less than 24 hours before a pick-up day, your order will be ready the following delivery to that location.
