THE CUT
Beef tongue, sometimes called lengua, is a popular cut for tacos. It’s a tender cut (when prepared correctly) that packs a lot of flavor but it isn’t used too often in American cuisine. We’re fans of using as much of the animal as possible, so we hope you’ll give it a try if you’ve never had it.
PREPARATION
Preparing tongue does require a decent amount of steps so we’re just dropping a link here for reference. This is a slow-cooker option that may be more appropriate for busy schedules.
