THE CUT

Homemade bone broth puts store-bought bone broth to shame, and when you make it yourself, you get to keep the marrow that is strained out. Use the broth for sipping or for soup, and spread the bone marrow on some toast for a snack.

PREPARATION

Place oiled and salted bones and 1-2 onions (peeled, cut in half, and oiled) on a baking sheet and bake in an oven at 450 degrees for about 25 minutes. Pull the bones from the oven and turn the oven off. Fill your Dutch oven with the roasted bones and onions and add water until all the bones are fully submerged and 2 inches under the water line. Turn the oven back on at a temperature of 185 degrees and bring the water in your Dutch oven to a simmer on the stovetop. Put the lid on the Dutch oven and place it in the oven to cook for 12-14 hours. At the end of the 12-14 hours, remove any marrow from the bones using a knife or spoon, and discard the bones. Pour your broth through a fine-mesh strainer into a dish to cool in the refrigerator. Place the marrow in the strainer in a separate dish to cool. Once the broth has fully cooled, you may take the layer of fat off the top and discard, or you may leave it if you prefer. Use the broth for sipping or for soup, and warm up the marrow to be spread on toast with some capers, salt, and pepper when you’re ready for a snack.

Orders must be placed at least 24 hours prior to pick-up time. If your order is placed less than 24 hours before a pick-up day, your order will be ready the following delivery to that location.
