Description
THE CUT
Lamb loin chops are basically the T-bone of the lamb, coming from the back between the legs and the ribs. This is arguably the most tender lamb cut and is a great, nutritious alternative to beef steaks.
PREPARATION
Lamb loin chops should be prepared the same as beef steaks. Allow your loin chops to sit at room temperature for one hour and then follow the procedures in this short video. Be sure to adjust searing times and heat based on the thickness of your chops. You may also wish to sear the fatty side of the loin chops by setting them (or holding them with tongs) on their sides for about 30 seconds at the very end of cooking.
