THE CUT
Liver is a very tender organ with bold flavor that, for most, warrants some taming through preparation. It’s an incredibly nutritious and unique cut, so we hope you’ll give it a try some time.
PREPARATION
If you prefer to really experience liver, we suggest you go with a popular liver dish from the southern U.S…fried liver and onions. (Be sure to soak the liver in the milk for about 1 hour). If you prefer to just dip your toe into the world of liver, we suggest you try this Finnish beef liver bake.

As a hair sheep breed, our Katahdin flock gives us lamb with an approachable, delicate flavor, perfect for first-time lamb eaters.
