THE CUT
Lamb heart is probably the least common of lamb offal cuts in American cuisine. While milder in flavor than liver, it is not quite as tender and requires a decent amount of trimming. It is incredibly nutritious, however, and can be very tasty when prepared correctly.

There are many ways to prepare lamb heart so we’re just dropping a link here for reference (same preparation as beef heart but smaller). Keep an open mind and enjoy.
