THE CUT
Our ground lamb is lean compared to our beef, but it is still moist and flavorful. Meat from our Katahdin hair sheep flock is a great introduction to lamb for those who’ve yet to try it.
(Due to the top-quality nature of our stock, feeds, and grazing systems, our break-even point on a pound of our USDA retail ground lamb is higher than that of the highest-priced ground lamb at our local grocery store, and that calculation doesn’t even include the costs of any of our labor or infrastructure. We’re extremely grateful for everyone willing to pay for our premium, local products, and we know you’ll taste the difference).
PREPARATION
Patty this up and thoroughly salt, properly sear both sides on a super hot cooking surface, pile up your favorite toppings, cheese, and sauces on a high-quality bun, and prepare to enjoy the best burger of your life. If you’re not in the mood for burgers, try our lamb in a chili, a shepherd’s pie, or a rice dish with tagine spices, carrots, and onions.
