THE CUT
Lamb shoulder steaks (sometimes called shoulder chops) are bone-in steaks that rival rib chops in tenderness. We prefer this cut to shoulder roasts due to the easy preparation.
PREPARATION
Lamb shoulder steaks should be prepared the same as beef steaks and lamb loin chops. Allow your shoulder steaks to sit at room temperature for one hour and then follow the procedures in this short video. (Note: This is a loin chop video but the procedures are the same). Be sure to adjust searing times and heat based on the thickness of your steaks. You may also wish to sear the fatty side of the shoulder steaks by setting them (or holding them with tongs) on their sides for about 30 seconds at the very end of cooking.
