Description
THE CUT
Leg of lamb is an extremely popular cut for holidays and other celebrations. It’s a great cut for feeding a somewhat larger group of people something that they might not get to enjoy very often. The leg of the lamb makes the perfect roast and we have ours cut boneless so the preparation is easier.
PREPARATION
Thoroughly salt and season your roast from 40 to 120 minutes prior to cooking and let sit at room temperature. Pre-heat your oven to 350 degrees and prepare a super hot cooking surface, such as a cast iron skillet, when ready. Heat oil on the cooking surface and sear roast for a 2-3 minutes (depending on surface heat level) on all sides. When all sides of the roast are seared very brown, add a few tablespoons of butter and turn the roast in the browned butter for a few seconds to coat all sides. Transfer the roast to an oven-roasting dish and place in the oven for about 15 minutes per pound until the internal temperature of the roast has reached 130 degrees (medium-rare). The actual minutes per pound will vary somewhat based on roast thickness, so be sure to check the leg temperature early to avoid overcooking. When the desired temperature has been reached, pull the roast from the oven and let sit for 20 minutes before slicing across the grain. Use the drippings from your roast to make a gravy with butter and cornstarch and enjoy with your favorite side dishes.
